This Blanc de Blancs consists of 100% Chardonnay, which gives the champagne freshness, elegance and minerality. Chardonnay is the only essential white grape variety permitted in Champagne. 15-20% wines matured in oak barrels with weekly batonnage. No malolactic fermentation. The Cuvée Blancs de Blancs is drawn at low pressure in order to obtain a rounder, full-bodied peariness. It matures for an average of 5 years in the wine cellar and is given a six-month rest period after the dégorgement to give its maturity the final touch. The dosage is adjusted for each vintage and is 8-10 g / l.
